Find a large hubbard squash that will make enough mashed squash to feed your family for Thanksgiving supper. Pick one slightly bigger than you think you will need, because you won’t use the outer skin and you will end up with a little less than you think after it is cooked and mashed. The best places to find whole hubbard squash are at farmers markets, fruit stands, local farms and sometimes pumpkin patches as hubbard squash is usually ripe and ready to harvest in late fall.
If love hubbard squash, purchase several and store in a cool, dark area, such as the garage and it should keep well until early spring. You can eat it all winter and even slice off smaller portions as needed for the size of your family. Once sliced open, you should then store your hubbard squash in the refrigerator for best preservation.
Hubbard squash makes an excellent, healthy alternative to starchy mashed potatoes and has a wonderful fall flavor that is perfect for serving with Thanksgiving supper. Enjoy
