Chef-chef Ed McFarland, owner of the Lobster Bar and EDS recently opened Ed’s Lobster Bar Annex, together with Crooked Brook, creators of Chef of the highest quality “World Jackets” to design and build its new custom chef coats.
Although his previous head chef jackets are 100% cotton pique fabric Petit Point, Ed wanted a fabric that would be cooler to wear, so he opted for a material with 100% white seersucker for his new look.
Chef McFarland chose M100 chef coat style with a left chest pocket and mother of pearl buttons from the river.

New York City native Ed McFarland had never eaten a lobster until the age of seventeen, but growing up in a family who had a passion for gardening and good food promoted his love for all things homegrown and tasty.
eds humble beginnings in Staten Island pizza kitchens were quickly overshadowed as he moved to work in some of the most renowned restaurants in New York. He graduated from the French Culinary Institute in 1995 and soon began to study some of the finest of New York, including Le Cirque Sotha Kuhn and Dave Pasternak Terence Brennan at Picholine. When he started cooking techniques to master, was attracted to the simplicity and delicacy of seafood and finally settled in West Village Pillar Pearl Oyster Bar, where he worked as sous chef for over six years, deepening their knowledge of New England cuisine and culture of the sea north-east.

And Lobster Bar is the result of his years of study and internships in combination with his experience and dedication to the kitchen garden fresh products. Using its home-grown vegetables and herbs in the summer and preparing for its Italian specialties such as meatballs lobster heritage, Ed has created a unique touch to fish in New England.
